FROM THE TEST KITCHEN
A handy way to preserve your HERBS while maintaining their COLOUR and FLAVOUR is to dry them in the MICROWAVE. Lay two sheets of kitchen paper on a microwave-safe plate, put a layer of herbs on the paper, then top with another two sheets of KITCHEN PAPER. Microwave on high for 1MIN, then move the herbs around on the paper, RE-COVER with kitchen paper and continue for 30sec bursts until the HERBS ARE DRY (should take about 3min in total, or less for soft herbs). Store in an airtight container in a COOL dark place (best used within a year).
