A handy way to pre­serve your HERBS while main­tain­ing their COLOUR and FLAVOUR is to dry them in the MI­CROWAVE. Lay two sheets of kitchen pa­per on a mi­crowave-safe plate, put a layer of herbs on the pa­per, then top with another two sheets of KITCHEN PA­PER. Mi­crowave on high for 1MIN, then move the herbs around on the pa­per, RE-COVER with kitchen pa­per and con­tinue for 30sec bursts un­til the HERBS ARE DRY (should take about 3min in to­tal, or less for soft herbs). Store in an air­tight con­tainer in a COOL dark place (best used within a year).
