Earl Grey Shortbread­s

Makes about 30 Whiz together 75g (3oz) caster sugar, 150g (5oz) cold unsalted butter, 200g (7oz) plain flour, zest 1 lemon and the contents of 1 Earl Grey teabag – roll out dough to 5mm (¼in) thick, cut out shapes, transfer to parchment-lined baking sheets and chill for 30min, then bake at 180°C (160°C fan) mark 4 for 15-18min; cool on a wire rack, then dip in melted white chocolate.
