Black Beans with Coconut, Chilli and Lime

‘Lime, chilli and garlic are the predominan­t flavours here, coming through both the infused oil and the crispy sprinkle at the end, making these beans particular­ly delicious.’

Hands-on time 20min, plus (overnight) soaking and resting. Cooking time about 55min. Serves 4 as a side

● 2 echalion shallots, finely chopped

● 2 garlic cloves, crushed

● 4 fresh kaffir lime leaves

● 1 ancho chilli, torn in ½

● 350g dried black turtle beans, soaked overnight in plenty of cold water with 1tsp bicarbonat­e of soda, see Yotam’s Tip

● 3tbsp lime juice

● 50g fresh coconut, finely shaved on a mandoline or roughly grated

FOR THE FRIED AROMATICS

● 90ml olive oil

● 2 garlic cloves, thinly sliced

● 2 red chillies, thinly sliced into rounds 10 fresh kaffir lime leaves

● 2tsp black mustard seeds

1 Start with the fried aromatics. Heat the oil in a small pan over medium-high heat. Once hot, reduce heat to medium, add garlic, chillies and lime leaves and fry for 2min, stirring, or until garlic is beginning to turn golden. Add the mustard seeds and fry for 30sec or so, until garlic starts to turn light golden-brown. Strain aromatics through a sieve set over a bowl. Set aromatics and oil aside separately.

2 For the beans, put 3tbsp of the aromatic oil into a medium pan over medium-high heat, then add the shallots, garlic, lime leaves, ancho chilli and 1¼tsp salt. Reduce heat to medium and fry for 6min, stirring often, until shallots are soft and golden-brown. Rinse soaked beans well, then add to the pan with 700ml fresh water. Bring to a simmer, then lower heat to medium and cook for 40min, stirring occasional­ly, until beans are cooked through but still hold their shape. Remove from heat, cover with a lid and leave for 10min.

3 To serve, transfer beans to a shallow serving dish. Discard lime leaves and ancho chilli. Drizzle over lime juice and remaining reserved aromatic oil. Scatter over the coconut, then the fried aromatics. Serve.
