One of the most enticingly scented of all fruit, the native-brazilian passion fruit – named by Spanish missionaries who thought its flower resembled the crown of thorns and stigmata of Christ’s passion – is a welcome taste of sunshine during our winter months. Curb the natural inclination to pick out the smoothest looking specimens – passion fruit are at their best when they look their saddest and deeply wrinkled. Once ripened at room temperature, store in the fridge. Halve and scoop out the pulp and juice to unleash the flavour of the tropics, and you’ll help boost your vitamins A and C, fibre and antioxidant levels. Enjoy as is, or in smoothies, with yogurt and ice cream, or to help sharpen up rich cheesecakes and pavlovas.
