One of the most enticingly scented of all fruit, the native-brazilian passion fruit – named by Spanish missionari­es who thought its flower resembled the crown of thorns and stigmata of Christ’s passion – is a welcome taste of sunshine during our winter months. Curb the natural inclinatio­n to pick out the smoothest looking specimens – passion fruit are at their best when they look their saddest and deeply wrinkled. Once ripened at room temperatur­e, store in the fridge. Halve and scoop out the pulp and juice to unleash the flavour of the tropics, and you’ll help boost your vitamins A and C, fibre and antioxidan­t levels. Enjoy as is, or in smoothies, with yogurt and ice cream, or to help sharpen up rich cheesecake­s and pavlovas.
