OAK SMOKED WATER

Originally created for the famously experiment­al chef Heston Blumenthal, oak smoked water has become a cool cheat’s way of adding a natural smokiness to any dish and is now a store-cupboard staple among many chefs. It’s made by the team at Welsh salt company Halen Môn, who smoke ordinary water in an oak smoker for four days. Smoked water gives a natural richness and depth of flavour to meat and chicken dishes, as well as risotto and stocks. You can even freeze it and add it to cocktails!
