It’s bread week and Selasi’s I “knead” to know recipe is a brioche-style loaf that makes the ideal lazy Sunday brunch. “I love the combination of herbs and honey in the sweet enriched dough,” he tells us. “I’m not a fan of butter, and this is a perfect bread to consume on its own, as it’s packed with flavour.”
Honey & Lemon Thyme Bread
Makes one tear-and-share loaf
l 420g strong bread flour
l 70g unsalted butter
l 2 medium eggs
l 112ml whole milk
l 1tsp vanilla paste
l 7g yeast
l 1tbsp honey
l 1tsp salt
l 50g caster sugar
l Handful of lemon thyme, chopped roughly
For the egg wash
l 1 egg yolk
l 10ml milk
For the glaze
l 2tbsp honey, warmed
l Sprigs of lemon thyme
l Sprinkle of sea salt
