Celebrate Wimbledon Tennis with a burger topped with... strawberries?!
There’s nothing that attracts rain quite as much as the start of Wimbledon… except perhaps a barbecue. Celebs may be flocking to Centre Court to scoff strawberries, but we’ve gone one better and combined the two champions of British summertime food to bring you a tasty lunch that’s worthy of a winning trophy.
Summer burger with strawberries
Ingredients: 6 strawberries 1tbsp balsamic vinegar 4 slices bacon 2tbsp ghee (divided) 1lb beef mince Salt & pepper (to taste)
Method:
1. Wash then halve the strawberries. Place them in a small saucepan with the balsamic vinegar and cook until soft. Transfer to a bowl.
2. Cut the bacon strips in half and fry (without using any fat) over medium heat until crispy. Transfer to a plate lined with kitchen towel.
3. In the same pan, add 1tbsp of ghee to the bacon fat, let it melt over medium heat, and cook the onions for about 5 minutes. Don’t let them burn, you really want soft onions.
4. Divide the beef into two equal portions and pat each portion into a 4-inch thick burger. Use your thumb to make a deep depression in the centre of both patties, then season each one with salt and pepper.
5. Heat up the grill to high, or place a griddle pan over a high heat. Brush the burgers with 1tbsp ghee and grill until golden brown on one side (for about 3 minutes). Flip them over and grill for another 4 minutes for medium rare.
6. Top the burgers with the crispy bacon, the onions and the strawberries. Serve on a bed of lettuce, or inside a brioche bun.
