Bake some Japanesest­yle kawaii cloud cookies

The Japanese trend for “kawaii” (meaning cute) has infiltrate­d everything from cartoons to clothing – and now it’s hitting the kitchen, too. Created by food stylist Juliet Sear, these cookies contain a hidden surprise and are almost too adorable to eat.

Piñata cloud cookies

1 batch shopbought vanilla cookie dough

Soft-peak white royal icing in a piping bag fitted with a No2 round nozzle 150g white sugar paste Sprinkles of your choice

Pink edible dusting powder for cheeks Soft-peak black royal icing in a piping bag fitted with a number No1.5 round nozzle, for face

Preheat the oven to 180ºc/ 350ºf/gas 4. Dust your work surface lightly with flour, then roll the cookie dough out to a thickness of roughly 4mm.

Using a cloud cutter or template, cut out three cloud shapes for each biscuit – you’ll need 30 in total.

Line a baking tray with baking parchment and place the cookies on top, leaving a 2.5cm gap between them.

Cut a small circle inside ten of the clouds to make space for the sprinkles – these will form the middle layer. Place all the cookies in the oven and bake for 10-12 mins.

white sugar paste to a thickness of 2mm and cut out ten cloud shapes.

Pipe a little white icing over ten of the baked cookies that don’t have a hole. These will be the top ones.

Put the sugar-paste clouds on top of these iced cookies.

To assemble, pipe a little royal icing around the edges of the holes in the ten cut-out cookies.

Press the cut-out cookies, iced side down, on top of the remaining plain cookies, to create the middle and bottom layers.

Pour sprinkles into each cavity, then pipe more royal icing around the edge of each hole.

Top with a sugar-paste cookie, press down and leave to dry for a few hours.

When dry, add cute faces to the cookies using pink dusting powder for the cheeks and black icing for the eyes.
