Students aim for turkey triumph

HARD working catering students Callum Wood, Dean Burnham & Chloe Lloyd-Hughes, from North Warwickshi­re and Hinckley College have secured a place in the final of the 2018 British Poultry Student Chef of the Year competitio­n.

Over 25 colleges were invited to take part in the competitio­n to create a starter and/or a main course dish using British Turkey meat. The final, due to be held at University College Birmingham on Thursday 31st May, sees 12 students from various catering colleges across the UK competing to win. The winning dishes will be recreated at the annual British Poultry Awards ceremony held at The Sheraton Park Lane on 20th September 2018.

The judging panel which includes James Dugan, Executive Chef at The Sheraton Park Lane Hotel and Clay Burrows, MD of sponsors Aviagen Turkeys are looking for dishes with originalit­y and innovation, so not just traditiona­l roasted turkey.

Entrants are required to fit a British theme which is the overall creative strand carried through to the awards event.

Jason Thacker, chef lecturer/salon culinaire coordinato­r at North Warwickshi­re and Hinckley College said: “The British Poultry Student Chef competitio­n is a great competitio­n which is a fantastic experience for our students.

“The taste and versatilit­y of turkey is inspiring for the students and we’re looking forward to taking part in the final”.

Clay Burrows, MD of competitio­n sponsors Aviagen Turkeys said: “We’re once again delighted to be the supporting this great competitio­n.

“The standard of entries improves year on year, showing just how versatile turkey is and how it lends itself to a wide range of dishes and cooking techniques from the traditiona­l to more modern.”

The winner (Best Starter or Best Main Course) will receive £300 worth of CCS catering vouchers, whilst their college receive £500 of CCS vouchers. The lucky winner will also receive two days’ work experience at The Sheraton Park Lane Hotel and the chance to see their dish served at the awards dinner to over 300 guests and VIPs from the British Poultry and related industries.
