CHOCOLATE CAKE
SERVES 6-8
200g melted butter, plus extra for greasing
4 eggs
400g golden caster sugar
120g plain flour
35g good-quality cocoa powder, such as Valrhona
5g sea salt
100g dark chocolate chips (70% cocoa solids)
■ Preheat the oven to 170°C/gas 3½. Grease and line a 23cm round cake tin. Lightly whisk the eggs and sugar in a medium bowl. Add the melted butter, fold in and then add the dry ingredients. Allow the mixture to settle for a few minutes before pouring it into the prepared cake tin.
■ Bake on the middle shelf of the oven for 30 minutes. Remove and allow to cool on a wire rack before refrigerating until you’re ready to serve the cake.
