is used in Burmese cooking, but when I started to research it, I found it’s farmed in really bad conditions in Asia and I would have had to get it from a supermarket.

“So instead, the haddock is in keeping with what we do here – locally produced ingredients with Burmese flavours and spices.”

The fish is wrapped in a Burmese flatbread, called a palata, before pickled cucumber and coriander mayonnaise is added. It is served with Burmese fried rice, with chickpeas and spices.

Ben said the fish butty has proved popular with customers since it was added to the lunch menu at a price of £6.99.

“People really seemed to like it,” he said. “It’s by far our most popular main on the lunch menu.” The fish butty is also available to take out.

Now in its fourth year, the Food Porn Awards recognise the bestlooking plates to come out of Northern kitchens.

The awards are split in to four categories: fine dining, casual dining, street eats and sweet treats.

A panel of judges will select the winner of each category – Cafe Mandalay’s fish butty is up against two other dishes in the street eats category – before a public vote decides the overall winner, dubbed the People’s Choice Award.

Last year, Huddersfield restaurant, Epicure Bar and Kitchen, in Queensgate, was nominated in the fine dining category for its goats cheese with black pudding, beef fat toast and pickled blackcurrents.
