Crab & tomato crostini

Ingredient­s

● 340G WHITE CRABMEAT

● 5 CHERRY TOMATOES, CHOPPED INTO SMALL PIECES

● 3TBSP CHOPPED FRESH BASIL

● 1 RED CHILLI, FINELY CHOPPED

● ½TBSP CRÈME FRAÎCHE

● JUICE AND ZEST OF 1 LIME

● 24 CROSTINI

● A FEW ROCKET LEAVES

1 Mix the white crabmeat with the chopped cherry tomatoes, basil, chilli, crème fraîche, lime juice and some salt and freshly ground black pepper.

2 Spoon the mixture onto the crostini. Top each one with the rocket leaves and a little lime zest. Serve immediatel­y, so the crostini don’t go soggy.
