The attack was caught on the bakery’s CCTV system, which has been handed to the police as evidence.

The Davies installed the security measure a few years ago to protect the bakery’s 13 members of staff.

Mrs Davies said the footage shows her husband checking the ovens during the ordeal to make sure his bread wasn’t burning, despite blood pouring out of his thumb.

He said: “It was instinct. It is my business and Friday is our busiest night of the week.

“I was worrying about the property, and the cars, and my staff. But mostly I was worrying about getting behind. I didn’t want to let customers down but the incident left us hours behind on production.

“I was in hospital, my son had to give a statement and although he tried to carry on, Jon also came to the hospital later because of his back.

“Two of my bakers stayed an extra four hours to get it all finished. We normally leave around 8am, but they stayed until midday on Saturday.

“Everyone was so good. Customers were asking how we were and one even gave me a bottle of wine.

“When we all came back to work on Sunday night we just looked at each other. We couldn’t believe what had gone on. We locked the door. We started earlier because we were working slower because of our injuries.”
