Bosworth Jumbles

Makes 20 175g unsalted butter, plus extra for greasing 175g caster sugar 1 egg 225g plain flour icing sugar, to dust Preheat the oven to 180°C/gas mark 4, and grease a large, flat baking tray. In a large bowl, cream together the butter and caster sugar with the back of a spoon for 2 mins, until light and fluffy. Mix in the egg thoroughly, then the flour, and mix until a firm dough. Roll the mixture into heaped teaspoon-sized balls with the hands, then roll into strips. Create the shapes by curling each strip into a circle and crossing the ends over to secure, using the image as a guide. Transfer to the tray as they are made, spacing 5cm apart. Bake for 15-20 mins, until golden. Allow to cool for 5 mins, then transfer to a wire rack with a palette knife to cool completely. Dust with icing sugar through a sieve before serving.
