Roast beef with mustard crust
Serves 4
2 tbsp English mustard 1kg silverside beef joint 2 tbsp breadcrumbs 2 tbsp softened butter 1 tsp white wine vinegar 2 tbsp olive oil sea salt and black pepper
Allow the beef joint to come up to room temperature before cooking. Preheat the oven to 220°C/gas mark 7. In a bowl, combine the mustard, breadcrumbs, butter, vinegar and oil, then season with salt and pepper.
Place the beef on a roasting tin and top with the mustard mixture, making sure there is an even coverage. Roast for 15 mins, then turn the oven to 180°C/gas mark 4 and cover the joint loosely with tin foil. Roast for 50 mins for medium. Allow to rest for 15 mins, covered, then carve and serve.
