Pea and paneer fritters
Makes 20
1 egg squeeze of fresh lemon juice 3 tablespoons plain flour ¼ teaspoon baking powder ¼ teaspoon garam masala
100g peas, half puréed
75g paneer cheese, diced 1 teaspoon sunflower oil 1 tablespoon chopped fresh kaffir lime leaves (optional), plus extra to garnish handful of mini poppadoms
2-3 tablespoons Greek yogurt
1-2 tablespoons mango chutney Whisk together the egg, lemon juice, flour, baking powder and garam masala. Stir in the pea purée, remaining peas and paneer.
Fry teaspoonfuls of the mixture in a little oil for 2 minutes until golden. Add the lime leaves to crisp up.
Serve each fritter on a piece of poppadom and topped with a dollop of yogurt, a little mango chutney and lime leaves.
