Grub’s up for health conscious students thanks to mum April
A FOOD box concept for students devised by the chairwoman of Prestbury Youth Club has been given the seal of approval by a nationwide organic food company.
Student Grub, set up by April Green, from Elm Rise in Prestbury, has now teamed up with organic food delivery company Abel and Cole, who will deliver April’s boxes of healthy ingredients across the UK.
The mum says she came up with the idea for the product a couple of years ago when her son, Conor, now 20, was about to start his A-levels at Fallibroome High School.
Based on the assumption that most students do not have much money and have a limited amount of cooking experience and not a lot of time, she came up with meal boxes especially geared towards them.
She said: “As a caterer I was already supplying private customers with canapes and dinner parties and the thought of my own son living on Pot Noodle sandwiches or expensive, unhealthy takeaways inspired me to create recipe boxes focused on students.
“Conor loves them as they are so easy to make meals with.
“They are the highlight of his week when they arrive.”
The boxes are stuffed full of healthy goodies such as fresh fruit and vegetables, organic baked beans and organic fish and meat including salmon and pork.
Other ingredients include seed mixes and olive oil.
After developing her website, recipes and prototype products, the nutrition conscious mum took her idea to Liverpool John Moores University to do some market research and had a great response.
She said: “The students loved the idea and I was signed as a direct partner of the university a few months later.
“I am now working with several universities including LJMU, Leeds Beckett, Nottingham University, University College London and Edge Hill University.
“I also support university events including student-led cooking competitions and demonstrations.”
