Harvesting asparagus IF you have an established asparagus bed which has been going for more than two years, you should now be harvesting delicious spears to steam and serve with hollandaise, or just on their own as a vegetable accompaniment that goes particularly well with fish.
Spears can be cut about 2.5cm under the soil for six weeks from mid April. For the best pickings, cut the spears when they are around 18cm tall. If you have a new asparagus bed, avoid harvesting the spears for the first two years to allow the crop to establish.
