Har­vest­ing as­para­gus IF you have an es­tab­lished as­para­gus bed which has been go­ing for more than two years, you should now be har­vest­ing de­li­cious spears to steam and serve with hol­landaise, or just on their own as a veg­etable ac­com­pa­ni­ment that goes par­tic­u­larly well with fish.

Spears can be cut about 2.5cm un­der the soil for six weeks from mid April. For the best pick­ings, cut the spears when they are around 18cm tall. If you have a new as­para­gus bed, avoid har­vest­ing the spears for the first two years to al­low the crop to es­tab­lish.
