Jill serves up a healthy deal for cookbook

HER SLAW CREATIONS ARE SNAPPED UP BY JAMIE OLIVER’S PUBLISHER

A PROBATION officer from Manchester is set to release her first cookbook after striking a deal with the same publisher as TV favourite Jamie Oliver.

Jill Greenwood, 37, spent two years perfecting her recipes before writing SuperSlaw.

The book contains 180 recipes for fast and balanced meals - all prepared using a food processor.

‘Slaw,’ the base of the recipes, is made using vegetables and olive oil. It is then tweaked and added to various meals.

Jill says the point of the book is to help readers get their five-a-day of fruit or veg while leading a busy life.

Jill, from Northenden, works as a crown court probation officer - and is a personal trainer in her free time.

“The idea behind SuperSlaw came from talking to my personal training clients,” she said.

“They were saying that they didn’t have enough ideas about how to get veg into their diet and shop-bought salads are expensive. Each recipe can be made in a food processor, which literally takes minutes, so it’s perfect for people who are on the go.”

If the ingredient­s are sourced cheaply enough and made in bulk, each portion of the various dishes can cost as little as 15p to make.

Jill added: “I found that when I was buying premade salads from the supermarke­t, I would spend just short of a tenner. My recipes are vegetable-based, so they are also more filling compared to shop-bought salads that are just leaf based.” Working two jobs made it difficult for Jill to find the time to come up with the recipes. But Jill, who has been in the health and fitness industry for more than 13 years, decided to write a book after speaking to a friend in publishing. She was signed to her agent, Kealey Rigden, before striking a deal with Penguin Random House, the same publisher as celebrity chef Jamie Oliver.
