COUR­GETTE AND BANANA LOAF

IN­GRE­DI­ENTS 2 large cour­gettes, grated / 3 bananas, mashed / 3tbsp co­conut oil, melted / 150g self-rais­ing flour / 50g ground flaxseeds / 1tsp bi­car­bon­ate of soda / 50g pump­kin seeds (plus ex­tra for dec­o­ra­tion) / 50g dried fruit

TO MAKE Mix all your in­gre­di­ents to­gether, adding a lit­tle more flour if the mix­ture seems too runny. Tip into a greased loaf tin, sprin­kle the ex­tra seeds on the top and bake at 180°C for 50 min­utes or till the top turns crisp. Al­low to cool, then eat with a smear of nut but­ter. RECIPE FROM

COUR­GETTE FRIES

IN­GRE­DI­ENTS (SERVES 1) 1 cour­gette / 100ml milk / 2tbsp chick­pea flour / 1tbsp olive oil

TO MAKE Cut the cour­gettes into chip-shaped chunks. Soak them in milk for 30 min­utes, then dry them us­ing kitchen pa­per. Roll them in the chick­pea flour and then fry them in the oil over a medium-high heat for four min­utes. RECIPE FROM
