COUR­GETTE SPAGHETTI

IN­GRE­DI­ENTS (SERVES 2) 2 cour­gettes / 10 shi­itake mush­rooms, sliced / 12 brazil nuts / 2 av­o­ca­dos / 2tbsp olive oil / Juice of a lime / Pinch of salt / Pars­ley, cas­sava flour and grated parme­san, to taste

TO MAKE Make the cour­gette spaghetti us­ing a julienne peeler, then set aside. Cook the mush­rooms over a low heat for four min­utes. Blend the nuts in a food pro­ces­sor un­til creamy. Add the av­o­ca­dos, oil, lime juice and salt and blend again, adding wa­ter grad­u­ally to pro­duce the de­sired con­sis­tency. Add the sauce and spaghetti to the mush­rooms and cook gen­tly for two min­utes. Serve sprin­kled with parme­san, cas­sava flour and pars­ley. RECIPE FROM
