PARSNIP RICE

One parsnip con­tains 42% of your RDA of vi­ta­min K IN­GRE­DI­ENTS (SERVES 1) 2 large parsnips, peeled and cut into chunks / 1 tbsp rape­seed oil / 100g ch­est­nut mush­rooms, sliced / 1 onion, chopped / 1 cour­gette, cubed / 2 gar­lic cloves, crushed / 1tsp grated ginger / 200g chicken breast, cooked and shred­ded / 2tbsp fresh co­rian­der, roughly chopped / Salt and pep­per, to taste

TO MAKE Blend the parsnips in a food pro­ces­sor un­til they reach a rice-like con­sis­tency, then set aside. Heat the oil in a saucepan over a medium heat, add the onions, ginger, gar­lic and cour­gettes and cook for three to four min­utes. Add the mush­rooms and cook for five min­utes. Stir in the parsnip rice and cook for another minute. Add the chicken and cook for two to three min­utes. Sea­son, add the co­rian­der and serve. RECIPE FROM

IN­GRE­DI­ENTS (SERVES 1) 2 parsnips / 1tbsp rape­seed oil / Salt, to taste

TO MAKE Peel the parsnips and slice them into thin chips. Heat the oil in a pan and cook the parsnips over a medium heat for 15 min­utes, toss­ing the pan ev­ery two min­utes. Sea­son the chips with a lit­tle salt and serve. RECIPE FROM
