INGREDIENT­S

SERVES 4 AN ONION, CHOPPED • GARLIC, 3 CLOVES • OLIVE OIL, 3TBSP • CHICKEN STOCK, 1L • FROZEN PEAS, 1KG • PULLED HAM, 200G • DOUBLE CREAM, 100ML • SPINACH, 100G • CHIVES, 1TBSP •

METHOD

1/ Sweat the onion in oil along with the antibacter­ial garlic. Simmer a separate pan of chicken stock – proven to soothe colds – while you wait. 2/ Add the vitamin-rich peas to the onion pan and season. Pour in stock to cover, add most of the ham, then turn up the heat for 10 minutes until the peas begin to soften. 3/ Add the cream and fresh spinach then blend until smooth. Pass through a sieve and cool over ice, adjusting the consistenc­y by adding extra stock if necessary. Grill the remaining ham for a protein-packed topping, along with chopped chives.
