• CORN TORTILLAS, 8 • VEGETABLE OIL, 1TSP • GROUND BISON, 460G • CHILLI POWDER, 1TBSP • SMOKED PAPRIKA, 1TSP • CINNAMON, PINCH • RADISHES, 2, SLICED • CORIANDER, 2TBSP • SALSA VERDE

iii/ PLAN

i/ Preheat the oven to 90°C and warm the tortillas in a cast-iron pan on a medium heat. Wrap them in foil and park them in the oven.

ii/ Heat the oil in the pan, add the bison* and cook for five minutes. Stir in the spices, plus a pinch of salt and pepper, and cook for a further minute.

iii/ Fill each tortilla with the meat, radishes, coriander and salsa verde until they’re bursting at the seams. Napkins at the ready.
