SWEET POTATO, QUINOA & BLACK BEAN BURGER
INGREDIENTS
1/ Quinoa, 120g 2/ Sweet potatoes, 460g 3/ Black beans, 340g 4/ Oats, 40g 5/ A red onion, chopped 6/ A beetroot, small, cut into chunks 7/ Coriander, half a bunch 8/ Garlic gloves, 2, chopped 9/ Cumin seeds, 1tsp 10/ A fresh lime 11/ Cajun powder, 1tsp
METHOD
Step 1 First, rinse and tip the quinoa into a pan of water (your ratio should be one part quinoa to two parts water). Bring to a boil on a medium heat, then reduce to a simmer until the liquid has been absorbed. Chop the potatoes into small chunks and place them in an oven pre-heated to 200°C until soft. Allow them to cool.
Step 2 Put all the remaining ingredients in a blender or food processor and pulse together until there’s a smooth consistency. A few big, rough chunks are fine and will add to the overall texture.
Step 3 Shape your mixture into burger patties, then fry them on a medium heat in a lightly oiled pan for a few minutes on each side until golden brown.
Make 10 burgers and enjoy two each day for an easy, high-nutrient lunch
