EXTRA MUSCLE COCOA STACK
Light on sugar, heavy on flavour and piled high with low-GI carbs, these will feed muscle growth and provide a boost to your strength
SERVES 1
• Sweet potato, ¼, baked
• Eggs, 2, whole
• Almond milk, 170ml
• Almond flour, 2tbsp
• Cocoa, 1tbsp
• Baking soda, ¼tsp
• Cinnamon, 1tsp
• Blueberries, handful
• Crushed walnuts, sprinkle
• Peanut butter, 1tbsp
METHOD
Scoop the potato into a bowl, crack in a couple of eggs and mash. Add the almond milk, healthy-fat-rich almond flour, cocoa and baking soda, then give it all a whisk. Cocoa contains epicatechin, which has been linked to muscle health. If your batter looks thin, add a spoon more flour. Heat a non-stick pan with a dash of oil, pour in your first batch of batter and cook until it bubbles. Run a spatula around the edges, flip the pancake and cook until both sides are golden. Feeling bold? Then try a toss. Repeat until you have a stackable tower, then top with cinnamon, blueberries (which speed exercise recovery), crushed nuts and the sauce: simply mix the PB with a dash of hot water until runny, then drizzle.
