STAMINA RAISING VEGAN PITTAS
Take a bite out of fatigue before your next endurance session. These are stuffed with antioxidants, plus enough carbs to ensure that you last the course
SERVES 2
• Aubergine, ½, sliced
• Red pepper, ½, sliced
• A fresh jalapeño
• Red onion, ½
• Lemon, ½, zest and juice
• Flatbreads, 2
• Houmous, 2tbsp
• Fresh mint
METHOD
Brush the aubergine and pepper with oil, then cook in the griddle pan until soft and lightly charred. Aubergine packs plenty of heart-healthy phytonutrients, while peppers are high in vitamin C. Finely slice the jalapeño and red onion – a source of the flavanol quercetin, which helps to offset exerciseinduced stress on the body – and grate the lemon. Combine the three. When the vegetables are done grilling, pop the flatbreads in the pan to warm. Spread with houmous and stuff the veg inside, along with a squeeze of lemon juice and a handful of torn mint. Tuck into your fitter pitta an hour and a half before training.
