ZA’ATAR TEMPEH PATTIES WITH RED LENTIL RICE

Za’atar spiced tempeh patties, 2

Cherry tomatoes, 80g

Pumpkin seeds, 8g

Za’atar spice, 4g

Red lentils, 20g

Carrot, 30g

Courgette, 100g

Red chard baby leaves, 20g

METHOD

First, make the patties by blitzing 65g of tempeh, half a small, roasted red pepper, 15g of red lentils, 15g of red onions and a healthy helping of ginger, garlic, ras-el-hanout and za’atar. Roast for 30 minutes at 180°C. Halve the tomatoes and roast the seeds, then sprinkle with za’atar. Simmer the lentils and dice your carrot and courgette, then roast. Plate up your chard with the lentils and veg, then top with the patties and seeds.
