Strawberry Cheesecake
Line a loaf tin, crush 130g digestive biscuits, mix with
60g melted butter, press into the prepared tin to make a base in the tin, chill. Meanwhile, whisk 150ml double cream until thick, dissolve 135g pack Delicious Desserts Strawberry Jelly in 125ml boiling water, add 200g full fat soft cheese, 400g of a mix of strawberries, raspberries and blackberries, 2 tablespoons of Ballycastle Strawberries and Cream Liqueur (Aldi £8.99) and the whipped cream. Set in the fridge (about 20 min) and serve scattered with fruit, and a cheeky dribble of the liqueur!
