VIBRANT TURKEY PEPPER STIR-FRY
Eating a healthy diet when you have heart disease means trying to eat more white meat, more fresh vegetables and less fat. This colourful, tasty recipe ticks all the right boxes – and it’s quick to make.

INGREDIENTS (Serves 4)
◆ 150g easy-cook long grain rice ◆ Juice of 1 orange ◆ 2tsp cornflour ◆ 2tbsp soy sauce ◆ 2tbsp sweet chilli sauce ◆ 2tbsp vegetable oil ◆ 350g turkey stir-fry strips ◆ 1 red and 1 yellow pepper, deseeded and sliced into strips ◆ 1 large carrot, cut into fine strips ◆ 150g mangetout, halved ◆ 1 bunch spring onions, finely sliced ◆ Salt and freshly-ground black pepper ◆ 1tbsp sesame seeds, toasted
1 Cook the rice in gently boiling water for 12min, or according to pack instructions.
2 Meanwhile, mix together the orange juice, cornflour, soy sauce and sweet chilli sauce. Set aside.
3 Heat the vegetable oil in a wok or large frying pan and stir-fry the turkey strips for 2-3min over a high heat. Add the peppers, carrot, mangetout and spring onions and stir-fry for another 6-7min.
4 Stir the orange juice mixture and add to the turkey and vegetables, cooking for a further 1min. Season to taste.
5 Serve the stir-fry, sprinkled with toasted sesame seeds and accompanied by the rice.
