GO WITH THE GRAIN TASTY SUPERFOOD SALAD
Including lots of grains and pulses in a diabetic diet is a great idea, so follow this recipe for inspiration, where quinoa, bulgur wheat and green lentils are combined with fresh fruit, veg and whole almonds for a superhealthy salad. Chicken is optional!

INGREDIENTS (Serves 4)
◆ 100g quinoa
◆ 100g bulgur wheat
◆ 2tsp vegetable stock powder
◆ 400g can green lentils, rinsed and drained
◆ 1 apple, chopped
◆ 2 celery sticks, sliced
◆ 100g seedless grapes
◆ 80g whole almonds, toasted
◆ 2 roast chicken breasts, skin removed
◆ 3tbsp olive oil
◆ 2tbsp lemon juice
◆ Salt and freshly-ground black pepper
◆ 100g pomegranate seeds
◆ Flat leaf parsley, to garnish
1Rinse the quinoa and bulgur wheat, then cook in simmering water with the stock powder for 15min, until tender. Rinse with cold water and drain well.
2Add the lentils, apple, celery, grapes and almonds to the quinoa and bulgur wheat. Rip up the chicken breasts into bitesized pieces and stir in.
3Mix together the olive oil and lemon juice, season, then stir into the salad. Serve, sprinkled with pomegranate seeds and parsley sprigs. Cook’s tip: Add canned flaked tuna, salmon or feta cheese instead of chicken.
