ORANGE CHOC CHIP PUDDING

To ensure that you get enough calcium in your diet, try to cook regularly with milk and dairy foods. This delicious pudding is a great way to sneak nutritious milk into your diet – especially important if you’re not a fan of drinking milk and you don’t add it to your tea or coffee.

Preparatio­n: 10min, 20min soaking Cooking: 35min INGREDIENT­S (serves 4) ◆ 25g butter ◆ 4 thin slices white bread from a large loaf, no crusts ◆ 50g dark chocolate ◆ 1 large orange ◆ 2 eggs ◆ 450ml skimmed milk ◆ 1tsp vanilla extract ◆ 20g caster sugar

1Grease a 1.2 litre baking dish with 1tsp butter. Spread the remaining butter onto the bread, then cut each slice into four triangles. Arrange in the dish and sprinkle with chocolate.

2Finely grate the zest from the orange. Beat the eggs, milk and vanilla extract together. Stir in the orange zest and sugar, allowing 3-4min to dissolve. Pour the mixture over the bread, cover and soak for at least 20min.

3Preheat the oven to 180°C, Fan Oven 160°C, Gas Mark 4.

4Peel the orange with a sharp, serrated knife to remove pith, then cut into slices. Uncover the pudding and tuck in the oranges. Bake for 30-35min, until puffed up and golden brown. Serve.

Cook’s Tip: Bread that’s 2-3 days old works best, as its drier texture soaks up the liquid like a sponge.
