Bunny Bum Banana Pancakes
INGREDIENTS (Serves 2)
1 small ripe banana
65g self-raising flour
1 medium egg, beaten
25g butter, melted
1tbsp caster sugar
4tbsp whole milk
1tsp vegetable oil To decorate:
Aerosol whipped cream, dark chocolate chips, sliced fruit and wafer flowers
1 Peel and mash half the banana and put in a bowl. Sift the flour on top and make a well in the centre. Add the egg, melted butter, sugar and milk and gradually work into the flour using a whisk until well blended.
2 Heat a large frying pan until hot. Brush lightly with a little oil. Spoon half the batter into 6 different sized pools in the pan (1 body, 1 head, 2 paws, 2 ears) and cook over a medium heat for 1-3min until bubbles appear. Flip over and cook for about 1min until golden. Remove, cover and keep warm.
3 Use remaining batter to make another batch of pancakes. Keep warm. To serve, slice remaining banana. Arrange pancakes on warm plates. Squirt cream for a fluffy tail and arrange banana and chocolate chips on the feet. Decorate with fruit and flowers.
