Ladybird Pops

INGREDIENT­S (Serves 4) u 115g white chocolate chips u 40g unsalted butter u 25g golden syrup u ½tsp vanilla extract u 50g toasted rice cereal u Red food colour gel or paste u 4 dark chocolate truffles u 1tbsp dark chocolate chips u Piping icing tubes to decorate You will also need: 4 x 20cm long cake pop sticks, 4 red drinking straws 1 Line a large board with baking parchment. Put white chocolate chips into a large heatproof bowl. Add butter and syrup. Place the bowl over a pan of barely simmering water until melted. Remove from the water. 2 Stir in the vanilla, rice cereal and red colouring. Mix well to make sure the cereal is well coated and very red. Spoon the mixture into 4 equal-sized mounds on the prepared board and gently press into rounded shapes. 3 Carefully push a cake pop or lolly stick through the bottom of each into the middle. and press down gently to make sure the stick stays in place. Push a truffle into the top of each and decorate with chocolate chips. Chill for 1hr until firm and set. 4 To serve, pipe faces on the ladybirds and insert the pop sticks into straws.
