PORK CHOPS WITH CREAM CHEESE & WHOLEGRAIN MUSTARD
INGREDIENTS (Serves 4)
◆ 4-6 thick pork chops
◆ 50g plain flour
◆ 2tbsp butter
◆ 60g wholegrain mustard
◆ 2tbsp Dijon mustard
◆ 200g cream cheese
◆ 4tbsp crème fraîche
◆ 250g green beans
◆ 1 lemon, juice and zest, finely grated
◆ Freshly-ground black pepper
1 Season the pork chops. Dust with flour, shaking off the excess. Melt the butter in a large sauté pan set over a moderate heat. Add the chops to the pan and brown well on both sides. 2 Stir in both the mustards as well as the cream cheese and crème fraîche. Cover with a lid and cook over a low heat for 15min. 3 Add the beans, lemon juice and lemon zest, and simmer for a further 5min until the pork is cooked through and the beans are tender. Adjust seasoning to taste. Serve with baked sweet potatoes and a green salad.
