Tequila Sunset

There’s a “sunset” slice of orange in these tequila, lemonade and orange juice jellies.

INGREDIENT­S (Serve 4) 1st layer: ◆ 300ml just-boiled water ◆ 4tsp powdered gelatine ◆ 50ml tequila ◆ 90ml grenadine syrup 2nd layer: ◆ 100ml just-boiled water ◆ 4tsp powdered gelatine ◆ 50ml tequila ◆ 200ml clear lemonade ◆ 1 orange 3rd layer: ◆ 100ml just-boiled water ◆ 4tsp powdered gelatine ◆ 500ml orange juice To decorate: ◆ Orange zest, maraschino cherries and paper parasols 1 For the first layer, pour the just-boiled water into a jug. Cool for 2min, then sprinkle in the gelatine. Stir, then allow to dissolve to give a clear liquid. Mix in the tequila and grenadine. Pour into 4 highball glasses and chill for about 2hr until set. 2 For the second layer, dissolve the gelatine as before, then stir in the tequila and lemonade. Pour over the set jelly in the 4 glasses. Remove the peel and pith from the orange using a serrated knife. Cut 4 thick slices, and slice these in half. Put 2 halves in each glass and leave to set – keep oranges in place with bamboo skewers if you wish. 3 For the third layer, dissolve the gelatine as before, then stir in the orange juice. Pour over the set jelly in the 4 glasses removing bamboo skewers, if used. Chill until set. Ser ve, decorated with orange zest, maraschino cherries and paper parasols. Cook’s tip: Tr y mango and apple juice instead of orange.
