Bacon-wrapped Turkey with Apricot Stuffing

INGREDIENT­S (Serves 2) Preparatio­n time: 25min Cooking time: 45min ◆ 2 turkey steaks (weighing approx 150g each) ◆ 30g ready-to-eat dried apricots, very finely chopped ◆ 20g Panko or fresh breadcrumb­s ◆ 2 spring onions, very finely chopped ◆ 15g butter, melted ◆ Finely grated zest of ½ lemon ◆ 1tbsp finely chopped fresh parsley ◆ Salt and freshly ground black pepper ◆ 1 egg yolk (reserve the white for Crispy Stuffing Balls) ◆ 4 rashers streaky bacon ◆ Vegetable oil, for greasing ◆ Cranberry sauce, to serve

Carefully beat out the turkey steaks between sheets of cling film, using a rolling pin, so that they are quite thin.

Make the stuffing by mixing together the apricots, breadcrumb­s, spring onions, melted butter, lemon zest and parsley. Season with salt and pepper, then mix in the egg yolk.

Spread the stuffing evenly over the turkey steaks, then roll them up into a cylinder shape. Wrap each one with two rashers of streaky bacon. Grease two pieces of foil with vegetable oil and wrap the turkey parcels separately. Chill for 15min.

Preheat the oven to 200°C, Fan Oven 180°C, Gas Mark 6. Put the foil parcels into a roasting tin and cook for 30min. Unwrap, removing the foil. Drain off any juices and pour these into a measuring jug. Return the turkey to the oven for a further 15-20min to brown and cook through.

When cooked, cover with a fresh piece of foil and rest for 10min before slicing and serving with cranberry sauce.
