QUINOA AND HALLOUMI SALAD

◆ 120g quinoa

◆ 6 slices of halloumi cheese

◆ 3 spring onions, thinly sliced into rounds

◆ 8 cherry tomatoes, halved

◆ 1 red pepper, diced into 1cm chunks

◆ 10g fresh coriander, chopped

◆ Sea salt and freshly ground black pepper

◆ Extra coriander leaves, to garnish

For the dressing:

◆ 1 tablespoon olive oil

◆ Juice of 1 lemon, freshly squeezed

◆ 1 teaspoon clear honey

1 Start by cooking the quinoa according to the packet instructio­ns. Once cooked, drain and transfer to a mixing bowl. Set aside.

2 Cook the halloumi slices under the grill for 4–5 minutes on each side, until the cheese is golden brown.

3 Make the dressing in a small bowl by whisking the oil, lemon juice and honey together. Season to taste.

4 Add the onions, tomatoes, red pepper and coriander to the quinoa. Add the dressing and combine well. Check the seasoning and add more if needed.

5 Divide the quinoa mix between two shallow bowls or plates. Place the halloumi slices on top of the quinoa and garnish with some extra coriander.with a little low-fat crème fraîche. Sprinkle with extra coriander.
