Chicken Citrus Salad

INGREDIENT­S (Serves 4) ◆ 2 large chicken breasts ◆ juice 1 lemon ◆ 1 tbsp honey ◆ 1 tsp each ground paprika, cumin ◆ 4 sticks celery ◆ 1 apple ◆ 2 oranges, segmented ◆ 1 bag mixed green leaves and spinach ◆ 150g roasted nuts Dressing ◆ Juice of 1 orange ◆ 50ml olive oil ◆ 1 tsp Dijon mustard

1 Rub the chicken breasts with the lemon juice (reserve 2tsp), honey and spices. Grill, turning frequently for about 15min until thoroughly cooked and evenly browned. 2 Dice the celery and unpeeled apple, tossing the apple in the reserved lemon juice. Toss together with the segmented orange. 3 Slice the warm chicken and arrange on top of the mixed leaves and celery mixture. Scatter over some of the nuts and offer the rest separately. 4 Whisk the dressing ingredient­s and drizzle over the salad.
