Zingy Avocado Toast

INGREDIENT­S (Serves 1) ◆ Large slice rye bread ◆ ½ avocado ◆ juice of ½ lemon ◆ ½ pink grapefruit ◆ 2 tbsp cream cheese ◆ 40g smoked salmon ◆ cress to garnish 1 Dress the peeled avocado with the lemon juice and lightly mash. Cut a grapefruit lengthways and segment the fruit. 2 Toast the bread and while still warm spread with the cheese. Top with the avocado, grapefruit segments and thinly sliced smoked salmon. 3 Dust with freshly ground black pepper and garnish with cress.
