BANANA PANCAKES WITH PEANUT BUTTER SAUCE
INSPIRED – AND TOTALLY YUMMY!

INGREDIENTS (Serves 4)
◆ 120g plain flour
◆ Pinch salt
◆ 1 large egg
◆ 150ml milk
◆ 2tbsp Greek-style yogurt
◆ 1/2tsp vanilla extract 1 banana, mashed 100g blueberries
◆ A little vegetable oil Sauce
◆ 30g peanut butter powder
◆ 30g light muscovado sugar
◆ 30g butter
◆ 60g golden syrup
◆ Sliced banana, blueberries and toffee popcorn, to serve
1 Put the flour and salt into a large bowl and add the egg, milk, yogurt and vanilla extract. Beat using a hand whisk to make a smooth batter. Stir in the mashed banana and blueberries.
2 Heat a non-stick frying pan and add a few drops of oil. Ladle in batter for small pancakes the size of drop scones. Cook until set on the sur face, then flip to cook other side. Continue until the batter is used up.
3 For the sauce, put the peanut butter powder, sugar, butter and syrup into a saucepan and heat gently until smooth. Add a little hot water to thin.
4 Serve pancakes topped with sliced banana, blueberries, toffee popcorn, and sauce drizzled on top.
COOK’S TIP: Find peanut butter powder in health food shops, or use smooth peanut butter.
