Carrots And Houmous With Poppy Seeds & Pine Nuts

Serves 2 Coarsely grate 1 medium carrot. Heat 2 wholemeal chapatis, flat breads or tortillas in a chargrill pan or under the grill. Spread each one with 2tbsp houmous. Top with the carrot and sprinkle with a few sultanas, poppy seeds and pine nuts. Crumble some feta cheese on top, and season with black pepper.
