Mexican Chilli Chicken Flatbreads

Serves 2 Finely chop 1 tomato, ½ small red onion and ½ yellow pepper to make a salsa. Mash 1 ripe avocado with a squeeze of lime for the guacamole. Take 2 corn tortillas and heat them in a chargrill pan, or warm under the grill. Top with the salsa, guacamole and shreds of roast chicken breast. Finish off each one with 1tbsp soured cream, thinly sliced green chilli and chopped fresh coriander.
