Hawaiian Turkey And Bacon Burger

INGREDIENT­S (Makes 4)

◆ 1 red pepper

◆ 500g lean minced turkey

◆ 2 rashers smoked streaky bacon, finely chopped

◆ 50g onion, finely chopped

◆ 80g carrot, peeled and grated

◆ 60g dry white breadcrumb­s

◆ 1tsp salt

◆ 2tbsp sweet chilli sauce, plus extra to serve ◆ 1tbsp vegetable oil

◆ 4 crusty white rolls, split and toasted

◆ Leaves of 1 Little Gem lettuce

◆ 4 slices grilled pineapple 1 Halve and deseed the pepper. Finely chop half and put into a bowl with the turkey, bacon, onion, carrot, breadcrumb­s, salt and 2tbsp sweet chilli sauce. Bring the mixture together with your hands and divide into 8 equal portions. Form each into a burger shape about 10cm diameter. Put on a plate lined with baking parchment, cover and chill for 30min or until you are ready to cook.

2 When ready to cook, brush a non-stick fr ying pan lightly with some of the oil. Heat until hot, add the burgers, reduce the heat to medium and cook for 10min. Brush the tops with oil, turn over and continue to cook for a further 7-8min, until thoroughly cooked.

3 To serve, slice the remaining pepper thinly and place in the rolls along with the lettuce. Pop 2 burgers on top, add pineapple and serve with extra chilli sauce.
