Turkey Salsa Tacos
T ISNGREDIENTS
( Serves 2)
◆ 1tbsp vegetable oil ◆ 1 turkey steak
◆ A little shredded
lettuce
◆ 4 taco shells
◆ 2tsp chia seeds
(optional)
Salsa:
◆ 1 tomato, finely
chopped
◆ 1 small avocado, pitted, peeled and chopped
◆ 2 spring onions,
finely chopped
◆ 50g roasted peppers (from a jar), drained and finely chopped 1tbsp chopped fresh coriander or parsley
A few drops of vinegar
Salt and freshly ground black pepper
1Heat the oil in a frying pan and fry the turkey steak until cooked – about 15min. Test with a sharp knife to check – the juices should run clear. Cool for 10min.
Make the salsa by mixing together the tomato, avocado, spring onions, roasted peppers and coriander or parsley. Season with a little vinegar, salt and pepper.
Put a little shredded lettuce into each taco shell and spoon in some salsa. Tear up the turkey and share it between the taco shells. Ser ve, sprinkled with chia seeds.
