Crunchy Chicken Satay Gems

INGREDIENT­S (Serves 4)

◆ 100g roast chicken,

ripped into pieces

◆ 80g cooked rice or

couscous

◆ 50g beansprout­s

◆ 4-5 radish, sliced

◆ 1 small carrot, grated ◆ 2-3 Little Gem lettuce, broken into separate leaves

◆ Soy sauce, to serve

◆ A few fresh chives Satay sauce:

◆ 1tbsp sweet chilli

sauce

◆ Juice of ½ lime

◆ 1tsp soft brown sugar ◆ 2tbsp toasted sesame

oil

◆ 2tbsp light soy sauce ◆ 4tbsp peanut butter

1Make the satay sauce by mixing together the sweet chilli sauce, lime juice, sugar, sesame oil, soy sauce and peanut butter. For a thinner consistenc­y, add a splash of water. Mix together the chicken, rice or couscous, beansprout­s, radish and carrot. Spoon into the lettuce leaves and top each one with some of the satay sauce. Serve, sprinkled with a little extra soy sauce and snip some chives on top.
