Crunchy Chicken Satay Gems
INGREDIENTS (Serves 4)
◆ 100g roast chicken,
ripped into pieces
◆ 80g cooked rice or
couscous
◆ 50g beansprouts
◆ 4-5 radish, sliced
◆ 1 small carrot, grated ◆ 2-3 Little Gem lettuce, broken into separate leaves
◆ Soy sauce, to serve
◆ A few fresh chives Satay sauce:
◆ 1tbsp sweet chilli
sauce
◆ Juice of ½ lime
◆ 1tsp soft brown sugar ◆ 2tbsp toasted sesame
oil
◆ 2tbsp light soy sauce ◆ 4tbsp peanut butter
1Make the satay sauce by mixing together the sweet chilli sauce, lime juice, sugar, sesame oil, soy sauce and peanut butter. For a thinner consistency, add a splash of water. Mix together the chicken, rice or couscous, beansprouts, radish and carrot. Spoon into the lettuce leaves and top each one with some of the satay sauce. Serve, sprinkled with a little extra soy sauce and snip some chives on top.
