While some foods don’t respond well to the canning process, which involves heating, others benefit from it. For instance, heating tomatoes boosts their lycopene content. Lycopene is a carotenoid, which studies suggest may help prevent cancer, strokes and cardiovasc­ular disease; and cooked tomatoes contain 10 times the amount that raw tomatoes do. Go for organic canned tomatoes for optimum goodness.
