THIS HEARTY DISH IS ENOUGH TO FEED THE WHOLE FAMILY
Ingredients
1kg new or baby potatoes
8 lamb cutlets
1 fennel bulb
1 lemon, cut into wedges
20ml olive oil
2 tbsp mint sauce
200g frozen peas
Juice of ½ lemon
Salt and pepper
Sprigs of fresh mint, to garnish
Method
■ Preheat the oven to 180°C/fan 160°C/gas 4.
■ Bring a large pan of salted water to the boil and parboil the potatoes for 10 minutes.
■ Place the potatoes and lamb cutlets in a large oven tray. Cut the fennel into wedges and add these to the tray, along with the lemon wedges.
■ Mix the olive oil with the mint sauce and pour it over.
■ Cook in the preheated oven for 30 minutes.
■ Remove from the oven, turn the lamb over, and mix all the other ingredients. Add the frozen peas, lemon juice, salt and pepper, and place back in the oven for a further 15 minutes.
■ Serve, garnished with sprigs of fresh mint.
