INGREDIENT­S

● 3 heaped tbsp of hummus

● 1 tbsp of fresh coriander (chopped)

● ½ tsp ground cumin

● 1 large tortilla wrap (made into 3 small circles using a cookie cutter or widerimmed glass)

● ½ avocado (thinly sliced)

● Small handful of feta cheese (crumbled)

My chef Ollie Downey helps me create all the recipes for my app, ensuring all our food is nutritious and tasty. This is a vegetarian dish that’s still really high in protein. It’s full of healthy fats, carbs, and fibre while also being low in saturated fats. It’s a cheat meal without actually cheating!

1. In a small bowl, combine the hummus, cumin and coriander.

2. Divide the mixture between the 3 tortilla circles, spreading evenly.

3. Top each tortilla with some avocado slices and feta.

4. Heat a large frying pan on a medium heat and place the tortilla circles inside.

5. After around 2-4 minutes (when the base of the tortilla has browned), remove from the pan and fold one side of the tortilla wrap over the avocado and hummus to create something which looks similar to a taco.
