Sales of premium tonic water have soared as we become discerning about what to mix with our upmarket gins. It’s a trend that bars have embraced – at Indianinspired BBQ restaurant Temper City, for example, 25-plus gins are paired with their own tonics, garnishes and martini serves. Drinks brands have also wised up, with many launching ranges of premium mixers. A recent release comes from Schweppes, which has created four premium tonics (plus one ginger ale) designed to match white and dark spirits. For something classic try the crisp tonic water, which has well-balanced bitterness and lots of bubbles. Alternatively, the salty lemon tonic has savoury notes that would match well with blended whisky or tequila.
